Neapolitan sauce is the collective name provided (outside Italy) to various standard tomato-based sauces originated from Italian cuisine, typically served over or along with pasta. In Naples, Neapolitan sauce is simply referred to as salsa, which essentially equates to 'sauce'. Basil, bay fallen leave, thyme, oregano, peppercorns, cloves, olives, and mushrooms might be consisted of depending on preference preferences. Some versions consist of carrots and celery. Outside Italy, the standard sauce is vegetarian, although meat such as minced beef or sausage can be added. By contrast, in Italy, the sauce meal carrying Naples in its name is a sauce called Neapolitan ragù.
